A classic white from Central Tuscany, old style – old way. The bunches coming from a field-blend, selected and destemmed, ferment with indigenous yeast on the skins until sugar is zero. Following the tradition, it is basket pressed and aged on fine lees in old French Tonneaux.
Grape: Trebbiano Gentile 85% , Malvasia lunga 15%.
Vineyard: Gradoni – 0.5 ha
Geographic exposure: Sud – Est.
Soil: Clay – Sand with high percentage of calcareous marine sediments.
Farming: Organic certified with Biodynamic trials.
Altitude: 360 – 385 m a.s.l.
Harvest: first week of September.
The wine is not filtered. A fine deposit may form naturally in the bottle without diminishing the integrity of the wine.
